Banana Colada Sundae


This is a great recipe for a summer dessert, well actually..... an anytime dessert. I guess I just eat more ice cream in the summer.

 I'm a fan of Edy's slow churned half the fat vanilla ice cream. It's so creamy and no one can tell it has less fat. I don't feel as guilty when I dump all the toppings on!

I always have the ingredients on hand for this ,too, so it's easy to whip up at the last minute if needed. We love the sweet caramel taste with a hint of orange and cinnamon....add the banana's, whipped cream, and coconut...and it's a winner!

Oh, and don't forget the cherry on top....that's my favorite part!





Banana Colada Sundae
(T of H)

6 Tbsp. butter, cubed
1/3 c. brown sugar
1/3 c. orange juice
2 tsp. cinnamon
4 medium bananas, sliced
1/2 tsp. rum extract (optional)
3 pints vanilla ice cream
1/2 c. toasted coconut

Heat the butter, brown sugar, cinnamon, and orange juice. Cook over low heat 4 to 5 minutes until sauce is smooth. Stir in bananas, heat through. Add extract. Serve over ice cream. Sprinkle with coconut.
