These are some awesome pancakes!
They are light and fluffy, and the warm blueberries just burst with flavor. Add some butter and syrup and I am in heaven!
I often order pancakes when we go out to eat, as they are such a favorite of mine. I make them at home quite often too. I like to make a batch and freeze them, grabbing a few in the morning to pop in the microwave. It's a great way to start the day!

1 1/4 c. flour
! Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg, beaten
1 1/4 c. buttermilk
2 Tbsp. canola oil
1 c. blueberries
Mix the dry ingredients together. In a separate bowl mix the wet ingredients, add to dry and stir until blended. Add the blueberries and fry on a griddle. ( I don't add the blueberries to the batter, I put 1/4 c. batter in the frying pan, then drop berries on top. Cook until it bubbles, flip and cook other side until golden brown.)
