Zucchini Bread


I bought a couple of zucchini to make some of my favorite bread..it makes 2 loaves so I always freeze one. I found this recipe in an old church cookbook years ago. I have a collection of cookbooks and it seems I always find the best recipes in the church ones. They are usually full of recipes that have been passed down from one generation to another....tried and true! This is very moist and has a great texture. I love the taste of the brown sugar and cinnamon in there. It's delish!

Zucchini Bread
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
3 eggs
1 c. oil
1 1/4 c. sugar
1 c. brown sugar
2 tsp. vanilla
2 c. grated zucchini
1 c. chopped walnuts

Sift the flour, salt, baking powder, baking soda, and cinnamon and set aside. Beat the eggs, oil,vanilla, and sugars together. Add sifted ingredients and mix well. Fold in the zucchini and nuts. Bake in two greased loaf pans at 325 for 45-60 minutes.

Thanks for recipe, it's the best zucchini bread I've ever made! I've been a faithful follower of your stamping site and now have added cookin up north to my favorites. From a Canadian friend, a little further up north!
