Cheddar chive drop biscuits WW Green 3 points

I have been trying some weight watcher friendly recipes lately, and came across this EZ drop biscuit.  The texture is a bit different with this recipe, not as light and airy, but still very delicious....especially with a bowl of chili.

I think the yogurt adds a nice tang, and I really liked the bit of cheddar. The chives were a perfect add in too.

I will make these again, at only 3 points for the green plan, they are a very tasty alternative!

Cheddar Chive Drop Biscuits ( 3 points green ww)

small container of plain Greek yogurt (3/4 c.)
1 egg
1/4 c. cheddar cheese, shredded
1 c. self rising flour
dried chives (to taste)
pinch salt

Mix and drop onto parchment lined baking sheet. serves 6. Bake at 400 until lightly browned.

Garlic Bread

Need a quick and tasty garlic bread? This simple recipe fits the bill...warm and cheesy. I like to serve it with a bowl of soup, so perfect for a chilly day!

Garlic Bread

1/2 c. butter softened
1/2 c. mayo
1/2 c. grated  Parmesan Cheese
1-2 cloves garlic, minced

Combine all and spread on a loaf of French bread, split. Broil until brown and bubbly.

Throw back Thursday...Beautiful Burger Buns

It's Throwback Thursday....time to re-post some of my favorite recipes and posts, hope you enjoy this one!

BEAUTIFUL BURGER BUNS

I am SO glad I made this recipe! The buns were awesome!

The recipe for the Beautiful Burger Buns is on the King Arthur website. The name really applies...they are a beautiful golden yellow.

I've made alot of bread ,and this is one of the best recipes I've ever tried.  I don't think I'll ever buy burger buns again. They were easy to make and taste delicious....so soft and slightly sweet....just perfect for a burger or sandwich.

I made a few larger size for burgers and some smaller for sliders, thinking I would freeze a few, too. That never happened. We ate a few just slathered with butter for an afternoon snack. Luckily we had enough for supper and a few for the next day!

I plan to make them again SOON!

Banana Bread

I have quite a few recipes for banana bread that I have collected over the years, and I like them all.

Starbucks Copycat Lemon Loaf ...pinned it and tried it

  Yum!

I just couldn't resist pinning this luscious lemon loaf! The lemon glaze was my favorite part. I pretty much like anything with lemon, so this is certainly a winner with me. However, I've never tried Starbucks, so I can't compare!

I guess that should be on my list....stopping at Starbucks to try a slice. I'm not a coffee drinker at all, so I never go there.

But I'll make a stop and let you know.....

Paula's Sour Cream Butter Biscuits

My daughter made these when we went to visit a few weeks ago. She likes to make a batch ahead of time and then warm them in the micro as needed. They are delicious!

The soft texture and slight tang from the sour cream is what sets them apart from other biscuits. I also like that they are mini size, a bit of butter and you can pop one in your mouth in no time!

Bundt Pan Cinnamon Overnight Rolls

These were awesome!

I've made a similar recipe before with butterscotch pudding that my family LOVES.( you can find that recipe here) But I saw this one with the vanilla pudding and cinnamon, and couldn't wait to try it. I love cinnamon! I also added some chopped pecans on half. Delicious!

Brent likes to warm them in the micro and slather with butter, but I like them just the way they are. The caramel, spicy cinnamon and crunchy pecans are a perfect breakfast treat!

Bundt Pan Cinnamon Overnight Rolls

12-15 frozen bread rolls ( I used Rhodes frozen dinner rolls)
1 small package vanilla cook and serve pudding
1/2 c. brown sugar
1/2 c. butter
1/2 tsp. cinnamon
1/2 c. shopped pecans

Grease a bundt pan well. Place frozen rolls inside. Melt the butter, and add the brown sugar, cinnamon, and pudding and heat till boiling. Pour over the frozen rolls. Top with pecans. Place in cold oven overnight. Next morning, take out of the oven.  Preheat to 350, and bake for 20- 25 minutes.

Starbucks Copycat Pumpkin Scones Recipe

The first word that comes to mind with these scones is..... YUM!

We gobbled these up in no time. I think they are quite similar to Starbucks, moist and absolutely delicious with both glazes on top. I did have some extra glaze left over, but that went fast, too, as Brent slathered it on every bite!

Starbucks Copycat Pumpkin Scones
Moms who think

2 cups all-purpose flour

7 Tablespoons sugar

1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 pinch ginger

Set aside. In a separate mixing bowl, whisk pumpkin, half and half, and egg. Fold wet ingredients into dry ingredients. Form the dough into a ball. Pat out dough onto a floured surface and shape it into a 1-inch thick rectangle.... 9 inches long and 3 inches wide. Slice the dough into three equal portions. Cut diagonally to produce 6 triangular slices of dough.

I found my bread machine!

I found my bread machine tucked in a corner closet the other day when I moved a few things. It wasn't really lost, but forgotten. I can't remember why I stuck it there.  It's been YEARS since I used it.

At one time, I had that thing going a couple times a week! I loved getting it ready in the morning before work and coming home to fresh baked bread for supper.

So, I dug it out.

I made some bread.

And it was delicious.

I'm glad I found it, I think I'll start using it more often!

Half wheat bread
(bread machine)

1 c. and 1 Tbsp water
1 Tbsp. honey
1 1/2 c. bread flour
1 1/2 c. whole wheat flour
1 1/2 tsp. salt
1 1/2 Tbsp. brown sugar
1 1/2 Tbsp. dry milk
2 Tbsp. butter, cut into 4 pieces
2 tsp. active dry yeast

Follow directions for your bread machine.

Old Time 4H Whole Wheat Bread...Monday's with Mom

4H was a special part of my childhood. I not only had a lot of fun in 4H, but I met so many great people, and learned so many valuable life skills! It also provided me with many happy memories of times spent with my mom. I have blogged before about how my mom was the food leader for my 4H club, but I have not shared all the awesome recipes we made at our events. Today I am sharing a simple whole wheat bread recipe I learned to make when I was about 10.

I could hardly wait each month for mom to take me to our 4H  meeting. It was always a good time. Before every meeting we said this pledge, which I still remember...complete with the actions of course!!!!

After saying the pledges, we had our meeting. The meetings were run by us, with our adult leaders also there. We all had to participate, and were assigned which part we would do each meeting. Some of the jobs included giving a demonstration on one of our projects,or leading the pledge, providing snack, leading an activity to do, things like that.  I LOVED making the snack, and HATED giving a demonstration. It always made me so nervous to get up in front of everyone!  Afterwards we got to go outside and play games. Our favorite was Ante I Over. We played until it was time to go. I remember many warm summer nights playing until it was to dark to see!

Summer was an exciting and busy time for anyone involved in 4H. Especially county fair time. Fair time was when you reaped the rewards of all the work you put in on your projects. Kids had so many things to choose from for projects....clothing, animals, photography, wood working, gardening, food....just to name a few.

I always chose food and gardening. I don't really like to garden, but since one of my chores was to help weed and pick the veggies, I decided I may as well. I always entered a vegetable box in the fair, and always won a ribbon. BUT the real blue ribbon winner was our rhubarb. It won every year! It was a sure dollar in your pocket. Our sweat pea flowers always won, too. (Blue ribbons were worth a dollar, red seventy-five cents, white fifty cents and green was  for participation.)

For food, I entered as many categories as I could. I always entered bread, and each year I tried a different recipe. This recipe is one of them.( another tasty 4H recipe you can find here)

Mom always tried to have a practice run on any new 4H recipes we were going to enter at the fair. Several of us in her food group decided to make whole wheat bread, so she had the group over to our house. What a fun day it was! She taught us some tips and tricks about bread baking, and about how yeast works, stuff like that. Then we made the whole wheat bread, enough so we could each have a small loaf. It was delicious...fresh out of the oven.... still warm.... spread with plenty of butter!

Later that summer, I made it by myself for the fair. It did win a ribbon, but I can't remember which one. But what I do remember is that special day when my mom took time to teach us how to make it! I'll always be thankful for all the things my mom did for me, especially sharing her love of cooking with me.

I haven't made this recipe for years, as I have a family dark bread recipe that has been passed down for generations that I make most of the time. I'd post it, but it's one of those "old time" recipes that doesn't  have exact measurements. This 4H  bread recipe has molasses in it for some sweetness, and scalded milk which gives it some softness. I made small loaves, easy to freeze. It's a great tasting basic recipe for whole wheat bread, and SO delicious....just like I remembered!

4H whole wheat bread

1 c. milk, scalded
3 Tbsp. shortening
1/4 c. molasses
1 Tbsp. salt
2 pkg. dry yeast
2 1/2 c. whole wheat flour
2 1/2 to 2 3/4 c. all purpose flour ( I used about 2 1/4 c.)

Mix the warm milk, shortening, molasses, and salt in a bowl. Cool to lukewarm. Dissolve the yeast in one cup of warm water. Let it stand 3 to 5 minutes or until bubbly. Stir into the milk mixture. Add all the whole wheat flour and 1/2 c. white flour. Beat until smooth. Add the rest of the white flour gradually, as needed, to make a stiff dough. (I used about 2 1/4 c.) Knead 5 minutes on a floured surface until smooth and elastic. Place in a greased bowl, cover and let rise in a warm place for 1 hour. Punch down and shape into 2 loaves. ( I made 4 small loaves) Put in greased pans, let rise until doubled. Bake at 350 for 35 to 45 minutes or until loaves test done. Cool.

Bacon Cheddar Puffs

Yum!
The bacon and cheese made these irresistible.

They would make an awesome appetizer, but I actually served them with a meal. It's been a long time since I made puffs of any kind, let alone savory ones, so these were a treat.

My son's friends mom used to make cream puffs, and we all loved them. She made them with real whipped cream and a delicious filling. They were SO good!

I may have to look up that recipe, and give them a try, too!

Bacon Cheddar Puffs
(sargento.com)

1 c. milk
1/4 c. butter
1 c. flour
4 large eggs
1 c. shredded sharp cheddar
8 slices bacon, cooked and crumbled
1/2 tsp. onion salt

Skillet Cornbread

How many cornbread recipes have I tried? A lot. And I always like them ALL.

This is no exception. What I liked about this, besides the buttery flavor and sweet crumb, was that the crust was so crisp and delicious!

I had never made cornbread in a cast iron skillet before and have been meaning to try it some day. I kept  reading about how good it is and how it makes such a difference baked in a skillet.

They were right, it does make a BIG difference. The crust was awesome! I'll be making corn bread in a cast iron skillet from now on, whichever recipe I use!

Skillet Cornbread

1 1/4 cups  cornmeal
3/4 cup all-purpose flour
1/4 cup  sugar
1 teaspoon kosher salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup whole milk
1 cup buttermilk
2 eggs, lightly beaten
8 tablespoons unsalted butter, melted

Preheat oven to 425 . Place the skillet inside to heat. Mix the dry ingredients together, then add the wet, reserving 1 Tbsp. melted butter. Take the skillet out of the oven and change the temperature to 375. Place the reserved melted butter in the skillet and swirl to coat. Add the cornbread mixture to the skillet. Bake for 20 to 25 minutes until done.

1 Hour Rolls...pinned it and tried it

These were so good! I loved how easy the recipe was, and they tasted great. I would definitely make these again.

BUT I would make just half a batch. They were awesome that first day, but after that the flavor was not as good, and they were very crumbly. So I would just make enough to use up at a meal. The recipe makes about 20 dinner rolls, so would be perfect for a holiday dinner!

1 hour rolls

1 c. warm water
1/4 c. sugar
1/3 c. oil
2 Tbsp. yeast
1 tsp. salt
1 egg, beaten
3 1/3 c. flour

In a bowl, mix together the warm water, sugar, oil, and yeast. Let stand for 15 minutes until yeast mixture is bubbly.Stir in the salt and egg to yeast mixture.Gradually add flour. Dough will be sticky, but add enough flour until manageable. Let the dough rest in the bowl for 10 minutes.Spray your hands with cooking spray and form dough into balls. Place balls (so they don't touch) on a cookie sheet. Let rise for 20 minutes.Bake in a 375 degree oven for 10 minutes.

Blueberry Cream Cheese Bread..pinned it and tried it

The other day I was invited over to a friends house to make cards, which is a hobby of mine. It was a good time!

She made a wonderful lunch, and for dessert we had blueberry cream cheese bread. She found the recipe on pinterest, (link below) and tried it out on us. I'm glad she did... as it's another winner!

It was so moist and delicious, popping with fresh blueberry flavor. The cream cheese was the best part...so rich and creamy.

Blueberry Cream Cheese Bread
Bread
½ cups butter
½ cups sugar
¼ tsp. salt
1 teaspoon vanilla
2  egg yolks
1-½ cup  flour
1 tsp. baking powder
⅓ cups milk
1-½ cup blueberries
1 Tbsp.  flour
2  egg whites
¼ cups sugar
 FILLING:
8 ounces cream cheese
½ cups sugar
1 Tbsp. flour
1 Egg
1 Tbsp. orange zest
 GLAZE:
2 Tbsp. sugar
½ tsp. vanilla
1 tsp. water

 For Filling
Combine cream cheese, sugar, 1 tablespoon flour, egg and orange zest; beat until smooth. Set aside.
For Glaze:
Stir together the glaze ingredients and set aside.
For the bread:
Cream butter and sugar (1/2 cup) until fluffy. Add salt and vanilla. Add egg yolks (save the egg whites....for later) to the sugar mixture; beat until creamy. Set aside.
In another bowl, combine flour (1 1/2 cups) and baking powder. Add this mixture alternately with milk to egg yolk mixture.
Coat berries with 1 tablespoon flour and add them to the batter.
In a separate bowl, beat egg whites until soft peaks form. Add sugar (1/4 cup), 1 tablespoon at a time, and beat until stiff peaks form. Fold egg whites into batter.
Pour 1/2 of the batter  into a floured and greased bread pan. Layer the filling over the batter and then finish with remainder of batter. This makes a layer of cheesecake between the blueberry batter.. Pour glaze over top of unbaked loaf and bake at 350  for 55-60 minutes.

Raspberry Cheese Danish

I saw these babies over on life as a Lofthouse, except she made strawberry ones. The picture was so good I wished I could have reached out and grabbed one!
Since I couldn't..... I made my own.
I bought just a 4 oz. tube of crescents, which made 2...just perfect for the two of us. And yes, they were as good as the picture! Very sweet, creamy and delicious. I served them slightly warm, so the icing was still melting all over them.
It was a great breakfast treat to get us off and going for a full day of Christmas shopping!
Raspberry Cheese Danish
Pillsbury
1 tube (8 oz) refrigerated crescent rolls
4 ounces cream cheese, softened
1/4 cup sugar
2 tablespoons lemon juice
6-8 teaspoons raspberry jam
Icing:
2 tsp. heavy cream (or milk)
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
Separate dough into four rectangles. Seal perforations. In a small bowl stir together cream cheese, sugar and lemon juice until smooth. Spread 1/4 of the mixture onto each rectangle. Roll up from long side; pinch edges to seal. Holding one end, loosely coil each.
Place on an ungreased cookie sheet. Top each coil with 1-2 teaspoons jam. Bake at 350 for 15 minutes, or golden brown. ( I needed to bake a bit longer for the middle to get done)
For glaze, in a bowl, combine powdered sugar, vanilla and cream. Stir until smooth and drizzle over each danish. Makes 4 danishes.

PW's sweet rolls

I don't think there are words to describe these rolls.

Decadent maybe.

Or over the top.

The best.

Take your pick....they're all true.

I've made these a few times now and each time they have turned out wonderful! I'll be making them again for Christmas morning. I love the maple flavoring in the icing.

The recipe can be found here at Pioneer Woman.

I have her first cookbook, which is a good read and full of awesome recipes.

Her latest cookbook is on my Christmas list.

I can't wait to read this one!

Banana bread with chocolate??? That's always a winner.

Add some nuts? Can't beat that.

But add the cherries..... and it not only adds that awesome sweet flavor, but the bright red turns it into a  perfect Christmas treat.

If I have ripe bananas around the holidays, I always pull out this recipe. It turns plain banana bread into some thing special!

2 eggs
2 c. flour
1 tsp. baking soda
1/4 tsp. salt

3/4 c. chocolate chips
1/4 c. chopped maraschino cherries
