Chocolate Chip Mint Pie

Hi everyone!

I made this simple and tasty ice cream pie for Easter and thought I would share the recipe. Once the ice cream has softened it takes only a couple minutes to make and throw in the freezer...a real bonus when you have a big meal with lots of sides to prepare. You can make it days in advance too. It's best to serve about 20 to 25 minutes after taking it from the freezer, so it softens a bit.

My son loves chocolate chip mint ice cream, and well...Brent loves ALL desserts, so I knew they would love this after our Easter meal. It hit the spot!

Sometimes I make it with cookie dough or cookies and cream ice cream, but chocolate chip mint is our favorite!

Chocolate Chip Mint Pie

1/2 gallon chocolate chip mint ice cream, softened
1 chocolate crumb crust
mini oreo's, chopped
chocolate mints, chopped

Spread the ice cream into the crust. Top with chopped oreo's and mints. Freeze until firm. To serve, remove from freezer for 20 minutes before cutting.

No churn Blueberry Cheesecake Ice Cream

Last winter, we went to visit our daughter and son in law who had recently moved out of state. We flew, rented a car and then drove a couple hours to get there, and we were all tired and hungry. When we walked in the door, she had this AWESOME dessert waiting for us.

It's one of the best things I have ever eaten!
Brent raved about it for months afterwards, and as soon as I had a good excuse to make it, I did!

The recipe has a few steps, but it is worth it!

I did have one problem, though. I accidentally bought some half and half instead of heavy whipping cream. I didn't notice until I had the mixture in the food processor and it was not getting thick at all. Now what to do? The ingredients are expensive, and I had company coming...so I thought about it awhile. I figured if I used my ice cream maker, it just may thicken.

So I tried it,and sure enough it worked. When It looked thick and creamy, I spooned it into the casserole, and finished layering the blueberries and cheese cake, and put it in the freezer. I guess my ice cream WAS churned, not " no-churned!!"  Oh well, it turned out perfect, just like my daughters no-churned.

Our company loved it,too!

The best part was that there were some leftovers for us the next day..enough for both of us....so we didn't have to share!

No churn Blueberry Cheesecake Ice Cream

Cheese cake bites:
2/3 c. graham crackers, crushed (4 sheets)
2 Tbsp. butter, melted
3 Tbsp. sugar
2 oz. cream cheese, softened
2 Tbsp. heavy cream
1 tsp. lemon juice
1/4 tsp. vanilla

Toss the graham crackers with melted butter and 1 Tbsp. sugar.  Divide between two small ramekins and press up the sides and bottom. Put the cream cheese, heavy cream, lemon juice, vanilla and 2 Tbsp. sugar in a bowl and stir well. Spoon on top of graham crackers. Freeze until firm. About 2 hours. Remove and chop into bite size pieces. Keep in freezer.

Blueberry Sauce:

3 c. blueberries
1/2 c. sugar
1 Tbsp. cornstarch
1 Tbsp. lemon juice
1 c. water

Combine all in a sauce pan and cook until thickened and shiny. About 30 minutes. Refrigerate until cold.

Ice cream:

2 c. heavy cream
6 oz. cream cheese, softened
2/3 c. sour cream
2/3 c. sugar
1 tsp. vanilla
1/2 tsp. lemon zest
pinch of salt

Place the heavy cream, cream cheese, sour cream, sugar, vanilla, lemon zest and salt in a food processor. Process until just thick and creamy.

Pour the ice cream mixture into a 2 QT. casserole. Spoon some blueberry sauce on top and swirl with a knife, add the cheese cake bites and stir in a bit. ( you may not use all the blueberry sauce.) Cover and freeze 3 hours or overnight. Take out about 15 minutes before serving.

Whopper Ice Cream Dessert

I remember when the ice cream sandwich dessert first became popular. My mom made it often in the summers for my kids when they were little. We all loved it! She made it without any candy.

Since then, there have been so many versions of this simple, yet delicious dessert. My favorite though... is this one....with the Whoppers.

YUM!

Whopper Ice Cream Dessert

12 ice cream sandwiches, unwrapped
12 oz. cool whip
hot fudge topping
carton of whoppers,chopped

Place sandwiches in a 9 x 13 pan. Drizzle some hot fudge on top. Mix most of the chopped whoppers with the cool whip and spread on top. Sprinkle with remaining chopped whoppers. Drizzle with more hot fudge. Freeze.

Ice Cream Torte

My sister in law gave me this REALLY good recipe years ago, and I dig it out of my recipe box and make it every summer. It's made in a 9 x 13 pan, but I made it in a 11 x 7 pan this time.

Why, you ask? Well, so the crust would be nice and thick,of course!

That's the best part, it's crunchy, nutty and caramel like because of the butter and brown sugar. You can really taste the coconut, too, as it bakes, it gets a toasted flavor.

Yep, it's a good one!

Ice cream Torte

3 c. rice Chex, crushed
1 1/2 c. coconut
3/4 c chopped nuts
1 c. brown sugar
1/2 c. butter, melted
Mix together, reserve 1/3 for top. Pat the rest in a lightly greased 9 x 13 pan and bake at 350 for 10 minutes. Cool completely.

1/2 gallon vanilla ice cream, softened

Spoon the softened ice cream on top and sprinkle with remaining topping. Freeze.

12 Weeks of Christmas... Chocolate Peanut Butter Topping

This is such a simple treat to make for the Holidays....only 3 ingredients! I think it would be a fun recipe to make with kids. Ice cream with topping AND sprinkles? It's got kids written all over it.

Ice cream and topping would be a nice addition to a Holiday dessert table, too. Guests could take some jars of topping home with them.

I found the recipe in a new church cookbook I bought. I had to try it right away. I knew it would be good. Rich, thick and oh so chocolaty! I could eat it by the spoonful, and of course....I did!

Chocolate Peanut Butter Ice Cream Topping
{Bonnie Stohs}

1 c. chocolate syrup (I used Hershey's)
1 c. white syrup
1 c. peanut butter
sprinkles
Mix together and serve on ice cream. (I warmed some up in the microwave, then stored the rest in the frig)

Be sure to check out all the other recipes! And thanks to Meal Planning Magic for hosting the hop!

Mr. Food Mint Sundae

Does anybody out there know Mr. Food?

I grew up watching his cooking segments after our local news. He was always fun to watch and had such great ideas. I always liked the end when he said, "Oooooh, it's so good!"

While I was shopping with my mother in law one day, I wandered into a book store. Of course I found the cookbook section first...and there sat the book, "The Best of Mr. Food."

So of course I bought it.

It was Mr. Food.

I had to have it!

Mr. Food's recipes are always quick and easy...not many ingredients....which I like. One of the first ones I tried was Chocolate Mint Sundaes. Only 3 ingredients!

I had my mint sundae in just 1 minute...and believe me,"Oooooh, it's so good!"

I googled Mr. Food and he's still on TV. I had no idea! He even has a web site with more recipes. The best part is that he is on the local network where we are moving, so I'll get to watch him again!

Mint Sundaes
(Mr. Food)
12 (0.25 ounce) chocolate covered peppermint patties
2 Tbsp. milk
vanilla ice cream ( I used vanilla bean}

Place peppermint patties and milk in a small microwave bowl. Cover and microwave on high for 1 minute until patties melt, stirring every 15 seconds. Serve over ice cream. Serves 4.

Cherry almond ice cream cups

One of my favorite desserts!

I'm a fan of almond flavoring, and I love it with cherries and pecans...mixed with ice cream, it's awesome!

Add some M&M's for a bit of chocolate, and its a perfect dessert.

The original recipe used both red and green cherries, and also red and green holiday M&M's. But we always have so many treats over the Holidays that I never make this then. I just use red cherries and regular M&M's.

These are fun for a Birthday, or any occasion, really. You can make them ahead of time, which is a plus for entertaining!

Cherry almond ice cream cups

1 qt. vanilla ice cream, softened
1/4 c. chopped pecans (I use more)
4 Tbsp. chopped red maraschino cherries
1/2 tsp. almond extract (I use more)
1/2 c. chopped M&M's (I use more)

Combine the ice cream, pecans, M&M's, cherries, and almond extract. Spoon into paper lined muffin cups and freeze for at least 30 minutes.  Garnish with extra M&M's and cherries. Serves 8.

Banana Colada Sundae

This is a great recipe for a summer dessert, well actually..... an anytime dessert. I guess I just eat more ice cream in the summer.

I'm a fan of Edy's slow churned half the fat vanilla ice cream. It's so creamy and no one can tell it has less fat. I don't feel as guilty when I dump all the toppings on!

I always have the ingredients on hand for this ,too, so it's easy to whip up at the last minute if needed. We love the sweet caramel taste with a hint of orange and cinnamon....add the banana's, whipped cream, and coconut...and it's a winner!

Oh, and don't forget the cherry on top....that's my favorite part!

Banana Colada Sundae
(T of H)

6 Tbsp. butter, cubed
1/3 c. brown sugar
1/3 c. orange juice
2 tsp. cinnamon
4 medium bananas, sliced
1/2 tsp. rum extract (optional)
3 pints vanilla ice cream
1/2 c. toasted coconut

Heat the butter, brown sugar, cinnamon, and orange juice. Cook over low heat 4 to 5 minutes until sauce is smooth. Stir in bananas, heat through. Add extract. Serve over ice cream. Sprinkle with coconut.

Grilled Pineapple Sundae

Last night I grilled some steaks and threw some pineapple on the grill too. I love grilled pineapple, especially FRESH pineapple.

I only had canned on hand, though, but it was still delish. We topped it with some ice cream, caramel, and toasted coconut for a great dessert. I'd seen a picture of it in a Taste of Home magazine....I think they added whipped cream and a cherry though. Well, there's always next time!

Grilled Pineapple Sundae

4 pineapple slices, grilled
4 scoops vanilla ice cream
1/2 c. toasted coconut
1/3 c. caramel sauce, warmed
whipped cream, cherries

Chocolate Chip Mint Ice cream

My son loves chocolate chip mint ice cream so I decided to make some with my Cuisinart ice cream maker I got for Christmas. I love that thing. It's so easy to make ice cream....TOO easy..I want to make it all the time!

This recipe was a big hit. I loved the mild mint flavor and the little bits of chocolate. It was so smooth, creamy, and refreshing.

We all  loved a scoop after our meals the last couple of days..such a treat!

Stir the milk, cream and sugar until sugar is dissolved. Add the salt, vanilla, mint, and food color, cover and refrigerate overnight. freeze according to the manufactures instructions. About 10 minutes into the freezing add the chocolate chips, and continue freezing until set.

Lowfat Strawberry Ice Cream

I love using my ice cream maker and am always making vanilla because we like it SO much. It's just so perfect....so rich and creamy!

But I wondered what would happen if I tried some lower fat ingredients. Would it taste good? What would the texture be like?

So I tried making strawberry ice cream using 1% milk and half and half in place of the heavy cream.

We were really pleased! Of course it was not as good as with the real cream, but still..it was delicious!

Icy cold and packed with bits of strawberries!

I'll definitely make this again.

Strawberry Ice Cream

1 1/2 c. strawberries, chopped rough or fine, however you prefer
3/4 c. whole milk (I used 1 %)
2/3 c. sugar
pinch of salt
1 1/2c. heavy cream ( I used half and half)
1 1/2 tsp. vanilla
Whisk the milk, sugar, and salt until sugar is dissolved. Stir in the heavy cream and vanilla. Stir in the strawberries. Cover and refrigerate 2 hours or overnight. Follow ice cream makers manufactures directions to make ice cream.

Home made Ice Cream Recipe

Guess what I got for Christmas?

An Ice Cream maker!

I've been making ice cream every chance I get.

It's so easy and delicious I wonder how I've gotten by without one for so long. So far I haven't experimented much. I keep making the vanilla over and over. At some point I'll have to get going and try something else. I keep meaning too.... as I found tons of ice cream recipes I want to try.

But everybody just loves the vanilla so much!

This is the recipe I have been using:

Simple Vanilla Ice Cream
{Cuisinart}

1 c. whole milk
3/4 c. granulated sugar
pinch of salt
2 c. heavy cream
1 T. pure vanilla extract

In a  medium bowl, use a hand mixer on low speed or whisk  to combine the milk, sugar, and salt until the sugar is dissolved. Stir in the heavy cream and vanilla. Cover and refrigerate 1 to 2 hours or overnight.

Pour into freezer and mix until thickened, about 15 to 20 minutes.

Peanut Butter Sundae

If you like peanut butter, you'll love this sundae topping. It's so simple. But sometimes I think simple can often be the best! There are only a couple of ingredients.

You just mix  peanut butter and  corn syrup together, adding more corn syrup if necessary until desired consistency. I like to put it in the microwave and warm it up. Then drizzle it over the ice cream and top with some peanuts. I think it would be fun to add some M&M's or even candy corn on top too, for a fun Halloween treat!

Peanut Butter Sundae

1/3 c. corn syrup
1/4 c. peanut butter
1/2 c. dry roasted peanuts

Mix the peanut butter and corn syrup. Drizzle over ice cream and top with peanuts. Serves 4.

Halloween Ice Cream Treats

Aren't these cute? I saw them in my Schwans catalogue...and had to make a few. I think this would be a fun project for a kids Halloween party. I love the salty taste of the pretzel with the ice cream.

Using a melon scoop, make small round balls of ice cream. Insert a pretzel handle and dip into sprinkles. Place on wax paper and freeze until ready to serve.
