Almond Wild Rice Recipe

This is another favorite wild rice dish of ours. I really like the nutty flavor...and the cranberries add some color and just a bit of sweetness. This goes well with many entrees, but I like to serve it with turkey. Our local  grocery store has a smokehouse and they make the best smoked turkey. It just melts in your mouth!

I love all the different textures in this dish...the crunchy nuts, soft chewy cranberries, and the fluffy wild rice. Feel free to add more only makes it better!

Almond Wild Rice

1/2 c. wild rice
1 Tbsp. soy sauce
4-6 green onions, sliced
1/3 c. toasted sliced almonds
1 Tbsp. butter
1/4 c. sunflower seeds
1/4 c. dried cranberries

Boil the rice and soy sauce in 2 cups of water until tender. Saute the onions in butter. Add the seeds, dried cranberries, and almonds to the rice. Stir in the onion mixture. Serves 4.

I love nutty/sweet rice dishes too! This looks super delicious and very healthy! I agree too...would make a great side dish to poultry...anything really!

We tend to forget how important is side dish. It complements the main course. If the side dish is a failure then it completely ruins the main. This one is definitely a winner!

Oooh, Laurie, this a perfect side dish, especially with chicken or pork. My mom would love this - bookmarking to make when she comes for dinner.
