Pesto Tomato Sandwich

This sandwich was AWESOME!

Since I am feeling so much better this past month, I have been able to eat more of the foods that I enjoy again. My surgery was last December and it's taken me this long for my digestion to get back to normal. Well, it's not exactly normal but it's ALOT better. Some of the foods that bothered me the most were fresh fruits and vegetables.

 For Christmas I got a food processor and haven't been able to use it much because of my limited diet. But I used it today to make the pesto. It made it SO easy, and the sandwich was SO good, I plan to make these again SOON!

Simple Pesto

2 c. basil leaves
1/4 c. Parmesan cheese
1/2 c. olive oil
3Tbsp. walnuts
2 garlic cloves, minced

Process until smooth.

Spread pesto on cilbatta bread. Top with chopped black olives, slices of tomato, and thick slices of monterey jack cheese. Spray a non stick skillet and grill until cheese is melted.

Wow W☺W WOW. How easy have you made this look. Very lol. I will certainly try this pesto. In the instructions you say 2 c basil leafs what does the c stand for please. Thankyou for sharing x
