Remoulade Chicken Salad Sandwich


This is a recipe my daughter passed on to me and am I ever glad she did, I loved this! I can't believe it's low in calories, actually it's a pretty healthy sandwich.

Luckily there's enough left for another one for me tomorrow!


Remoulade Chicken Salad Sandwich

2 Tbsp. plain yogurt (I used Greek}
2 Tbsp. lite mayo
1 Tbsp. ketchup
1 Tbsp. sliced green onions
1 Tbsp. sliced shallots
2 tsp. Dijon mustard
juice of 1/2 lemon
1/2 c. diced red pepper
1 Tbsp. dill relish
salt and pepper to taste
4 hoagies
2 Tbsp. olive oil
3 c. cooked and shredded chicken breast
1 c. mixed salad greens
1 large tomato, sliced


Blend the yogurt, mayo,ketchup , shallots, green onions, Dijon, and lemon juice in a food processor. Stir in the red pepper,relish, salt, and pepper. Combine with the chicken. Slice the hoagies and brush with olive oil. Toast under broiler. Layer greens, tomato slices, and chicken on hoagie.
