Easy Black Bean Soup

I love this soup because it is SO simple. It also tastes great, and is warm and satisfying.The lime gives it a nice tang!

 I usually have the ingredients for this on hand, and often add leftover chicken. Sometimes I add  a dab of sour cream on top, and crushed tortilla chips.

                                                                       Black Bean Soup
1 can black beans, drained and rinsed
1 1/2 c. chicken broth
3/4 c. salsa
1/2 c. corn
dash of hot pepper sauce

Simmer 45 minutes. Right before serving, sprinkle some shredded cheddar cheese and sliced green onions on top. Drizzle some lime juice over all..

I see tomatoes in it - did you add a can of tomatoes? It looks great!

Judith, the tomatoes were in the salsa...I always buy chunky salsa!
