Tomato Basil Snackers

This combo is great on an English muffin. They are so crispy! I loved the tang from the mayo, and of course the melted favorite part!

I think I've had these 3 days in a row now. Yep, I'm going to have them again tomorrow, too.

Tomato Basil Snackers
Taste of Home

 2 English muffins, split and toasted ( I used 1 pt. Village Hearth}
 2 T. fat free mayo
4 slices tomatoes
basil leaves, cut into strips
1/2 c. shredded mozzarella cheese ( I used slices of fresh Mozzarella}

Spread the mayo on the muffins. Top each with a slice of tomato. sprinkle with cheese and basil. Broil until
cheese is melted. Serves 4. 118 cal 3 fat 1 fiber
