Couscous with feta and tomatoes

This is another fun side dish....light and refreshing with great flavor. The sun-dried tomatoes and feta are a delicious combo! I like to have this all by itself for a quick lunch,too.

Couscous with Feta and Tomatoes
Taste of Home

1 c. boiling water
1/2 c. sun dried tomatoes (not packed in oil)
1 can vegetable broth (14 1/2 oz.) I used chicken broth
1  1/4 c. couscous
1/2 c. crumbled feta cheese
1/4 c. fresh minced parsley
1  1/2 tsp. fresh or dried oregano
3 tsp. lemon juice
1 tsp. water
1 tsp. olive oil

Pour boiling water over sun dried tomatoes and let stand for 5 minutes. In a saucepan bring broth to a boil. Stir in couscous and cover, let stand 5 minutes until broth is absorbed.
Drain and chop tomatoes. Stir in rest of ingredients and serve warm or chilled.
