Chicken with Black Bean Salsa



This is our new favorite grilling recipe!

  We love to grill,especially in this hot weather., and this is SO tasty! The rub on the chicken is simple, but packs alot of flavor. This dish is definitely sweet and savory, with the brown sugar in the rub and the sweet pineapple in the salsa. It all works together though, and the delicious result you will find in bite after bite.

Chicken with Black Bean Salsa
 (Light and Tasty)


 1 (15 oz. ) can black beans, drained
1 can (8oz.) unsweetened crushed pineapple, drained
1/2 small red onion, chopped
1 plum tomato, chopped
1 garlic clove, minced
2 Tbsp. lime juice
1/4 tsp. salt
1/4 tsp. pepper

RUB

(I doubled this)
1 Tbsp. brown sugar
1 tsp. hot pepper sauce (I omitted)
1/2 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. pepper
4 boneless chicken breasts

Mix the rub ingredients together and rub on both sides of the chicken. Mix all the ingredients together for the salsa and refrigerate. Grill the chicken until juices run clear. Top with salsa.

Any tips on grilling the boneless skinless chicken beasts so they don't end up dry & tough (always my luck). Thanks!

Make sure you don't over cook them...just until the juices turn clear. They will be tender and juicy.

You can always marinate them, too!
