Egg Bake
We all enjoyed this oven bake!
It's full of tasty ingredients like ham, cheese, onions and red peppers. I had some leftover ham and went surfing for a recipe and found this one at All recipes. The reviews sounded good and they were right...it is excellent. I thought there was way too much cheese, though, so I only used 3 c. and it turned out great. I mean I like cheese, but SIX cups? Three was just right.
I'm glad I tried this and will definitely make this again soon!
Brunch Egg Bake
3 c. cheddar cheese, shredded
3 c. mozzarella cheese, shredded (I omitted this}
1 small can mushrooms, drained
1/2 c. red pepper, chopped
2 Tbsp. butter
1/3 c. green onions, chopped
2 c. ham, chopped
8 eggs
3/4 c. milk
1/2 c. flour
2 Tbsp. fresh parsley, chopped
1/2 tsp. basil
salt and pepper to taste
Mix cheese together, place 3 c. in an ungreased 9x13 pan. Saute the red pepper, onion, and mushrooms until tender.Place on top of the cheese.Top with ham. Sprinkle with remaining cheese. Combine the eggs,flour,milk, parsley, basil, salt and pepper, and pour on top. Bake at 350 for 35 -40 minutes until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.
