Pimento Jack Grilled Cheese



I'm a fan of pimento cheese and often make a small batch just for myself. But I have never tried it with pepper jack cheese before.

It rocks! I love the spicy kick...and it was excellent for making a grilled cheese sandwich.

The rest I ate with crackers for snacks. Yum!


Pimento Cheese
(cuisine at home)


 2 pkg. cream cheese, room temp.
1 1/2 c. shredded cheddar cheese
 1 1/2 c. shredded pepper jack cheese
1/4 c. real mayo
1 7oz. jar sliced pimentos, pressed and squeezed to remove liquid
1/4 c. sliced scallions
salt, pepper, and cayenne pepper to taste

Combine all and mix well. Can make into balls (refrigerate 4 hours) and roll in nuts, bacon bits, herbs, or crushed potato chips.
