Lemon Cookies

My daughter is the BEST baker. Honestly, she could open up a bakery. She doesn't bake very often, though, but when she's always a winner.

We went to visit a few weeks ago, and she made these awesome lemon cookies. She found the recipe at Fancy Road House. They were so soft and delicious with a mild lemon flavor....and the frosting was so sweet and creamy.
I'm not sure who ate more..Brent or ME!

Lemon Cookies with Lemon Cream Cheese Frosting

1 c. sugar
2 eggs
2 tsp. vanilla
1 1/2 tsp. lemon zest
1/2 lemon juice
3 1/4 c. flour
2 tsp. baking powder
1/2 tsp salt.

Cream the butter and sugar. Add the eggs, vanilla, lemon juice and zest. Sift the flour, baking powder and salt. Add to the wet mixture. Wrap and refrigerate 1 hour.
Roll out dough to 1/2 in. thickness and cut with cookie cutters. Place on parchment lined baking sheets and chill 10 minutes.  Bake at 350 for 10 minutes. Cool completely.

8 oz. cream cheese, softened
1 stick butter, softened
1/2 tsp. vanilla
2 c. powdered sugar
2-3 tsp. lemon juice

Beat the cream cheese, butter, vanilla and lemon juice. Add  the powdered sugar. Stir well and spread on cookies.
