Andes mint cookies...pinned it and tried it



I'm so excited to post about these AWESOME cookies.....

I pinned it, tried it and LOVED it!

They are amazing. And when eaten still warm, even better than amazing! I really can't believe only 4 ingredients can make such a delight. 

Make sure you don't over bake them, in fact I would under bake them slightly next time I make them. (which is SOON) One pan came out perfect, but the other pan I left in a bit longer and although they still tasted good, we preferred the first pan.They stayed soft, and a bit chewy in the middle. Yum!






Andes Mint Cookies

1 box devils food cake mix
1/2 c. oil
2 eggs
1 package Andes mints, wrappers removed

Mix the cake mix, oil, and eggs. Drop by spoonfuls onto parchment paper, bake at 350 for 6-9 minutes, do not over bake. Place a mint on top and let melt a few minutes, spread with knife.

I have pinned these, but have not tried them. I must do it now. I love chocolate and mint together.
