Crispy potato puffs




Next time you have some leftover mashed potatoes, give these a try!

All you do is mash the potatoes as you normally would, then add just a bit of milk and butter. Cool and then stir in some shredded cheddar cheese.(You could also add some minced onion, bacon, etc.) Then crush some corn flakes, stirring in some seasoned salt. Roll the balls in the corn flake mixture and freeze until you are ready to bake them.

They are SO crispy, and SO delicious!





Crispy Potato Puffs

 Potatoes
milk 
butter
shredded cheese
crushed cornflakes
seasoning
Boil the potatoes in salted water.  Mash the potatoes with a splash of milk and a few tablespoons of butter. Cool. Stir in some shredded cheddar cheese. Roll into balls. Mix some seasoned salt with the corn flake crumbs. Roll the balls in the crumbs and freeze. Bake at 425 on parchment paper for 15 to 20 minutes until golden and heated inside.

60 degrees in the house is COLD! I like to keep our house at 65 during the day and turn it down at night before sleeping. But we heat with wood, so the furnace doesn't kick in unless it's well below zero outdoors. Aren't you glad that was only 3 days! I can't even work when I'm too cold. I just want to huddle. :-)
