pinned it and tried it....Olive Garden Creamy Zuppa Toscana Soup




Not too long ago I was invited to a friends house for a fun day of card making. For lunch we had this awesome soup, and of course I asked for the recipe. It was one she found on Pinterest, a copycat for Olive Garden's Creamy Toscana Soup.

While I have been to Olive Garden, I have never tried this soup, so I can't say if it tasted just like it. But I can say it was delicious! 
Creamy and flavorful!

 I loved the spicy sausage, soft potatoes, and the crispy bacon on top. 
While I didn't exactly pin this recipe, I'm glad my friend did.

 AND I'm also glad I tried it and loved it!

Creamy Toscana Soup 

3 cans chicken broth
2 c. heavy cream
1 lb. Italian sausage, casing removed
1/2 lb. bacon, cooked and diced
4 russet potatoes, peeled and thinly sliced
1 onion, diced
1 Tbsp. olive oil
2 cloves garlic minced
2 1/2 c. chopped spinach or kale
salt and pepper to taste

Bring the broth to a boil and cook potatoes until tender. Meanwhile, saute the onion and garlic in olive oil. Add to the broth. Add the sausage and spinach, boil until it starts to wilt. Reduce heat and add cream, cook until heated through and add salt and pepper to taste. Top with bacon.

I love that soup. I ALWAYS get it when we go to the Olive Garden.
