Summer time ...Watermelon Poppy Seed Salad

 
Nothin' says summer like watermelon!

I had to buy one for Labor Day...and had quite a bit left over, which is a good thing. I love watermelon and it tastes awesome in this salad. The poppy seed dressing really brings out the flavor of the melon.

There's a lot of textures going on in this salad....crisp lettuce, soft juicy watermelon, and crunchy almonds on on top. It's perfect for summer, so refreshing, light and delicious!







Watermelon Poppy Seed Salad

1 package mixed salad greens
2 c. seeded watermelon, cut into cubes
1/4 c. sliced almonds

Dressing:
1/2 c. cider vinegar
1/2 c. sugar or splenda
1/2 tsp salt
1/2 c. vegetable oil ( I use olive oil)
1/4 c. onion, chopped fine
1 tsp. poppy seeds

Put in shaker and shake well. Pour over salad greens and watermelon. Top with almonds and serve.
