I found this recipe a co worker had put in our school cookbook few years ago. I had to try it, after all Brent LOVES Cool Whip, so this sounded right up his alley.
I was right, he did love it, but SURPRISE, he wanted more Cool Whip on top!
3 oz. lite cream cheese, softened
4 oz. lite cool whip
1 c. mini marshmallows
Beat the cream cheese until light and fluffy, fold in cool whip and marshmallows. Spoon onto wax paper lined cookie sheet into 2 inch circles and freeze for 2 hours before serving. Top with fresh fruit.
