Strawberry Shortcake...Mondays with Mom


Strawberries remind me of summertime...and my mom. 

I think one of her favorite desserts to make was strawberry shortcake, as she often served it when we had guests. Sometimes she made it for my nieces birthday,too. When my brother and family would come to visit in the summer, it was usually strawberry picking time right around her birthday. There is nothing better then fresh picked berries!

Many times Mom used an angel food cake, or even the sweet Bisquick recipe right from the box. But I liked it best with this simple cake. 



The crumb is so sweet and moist, and I love the edges!



Mom often used real cream especially for company, and whipped it up right before cutting the cake. If she was in a hurry she used Dream Whip or Cool Whip. But I liked it best when she made real whipped cream, and let me lick the spoon!



Strawberry Shortcake

1 c. flour
1/2 to 3/4 c. sugar ( depends on how sweet you like it)
1 tsp. baking powder
1/4 c. butter, melted
1 egg, beaten
1/2 c. milk
1 tsp. vanilla

Mix the flour, sugar and baking powder together. Add the butter,egg and vanilla until just mixed. Line a pie plate with parchment paper, spray with butter spray, spoon mixture inside. Bake at 375 for 25 minutes or until tooth pick comes out clean. Cool and remove from the pan. Take off the parchment paper and cut the cake in half. Place the bottom on a plate and cover with whipped cream. Top with sliced strawberries. Place the other half of cake on top. Cut  and serve with more whipped cream and strawberries.

Whipped Cream

1 1/2 c. heavy cream
4 1/2 tsp. sugar
1 tsp. vanilla

Beat at medium speed until frothy,(2 to 3 minutes) increase speed and beat until billowy and cream stays on the mixer. ( 30 seconds to 1 minute)
