I love making muffins...they're so fun to make...and eat! Especially when the raspberries are so fresh.
I actually made these for a friend who was home from the hospital.
BUT I did sneak one, and they were delicious. I loved the glaze and fresh slight tang from the lemon! I can't wait to make another batch....
2 c. flour
1 c. sugar
1 Tbsp. baking powder
1/2 tsp. salt
2 eggs
1 c. buttermilk
1/2 c. oil
2 tsp. lemon zest
1 1/4 c. raspberries
Glaze:
1 c. powdered sugar
3 to 4 Tbsp. fresh lemon juice
Mix the eggs, buttermilk, oil, and zest. In another bowl mix the flour, sugar, baking powder,and salt. Combine all and stir just until mixed. Gently fold in the raspberries. Spoon into muffin lined tins and bake at 400 for 18-20 minutes. While warm drizzle with glaze.

Aren't muffins just perfect in this chilly weather? These look so moist and delicious! I've never made muffins with raspberries, but now I think I want to, so thanks for sharing this recipe!
