This recipe is a keeper!
I used canola oil instead of butter and they were delicious. Crisp edges with slightly soft centers. I also liked the texture from the addition of corn starch.
I used mini chocolate chips, so there were some in every bite.....so addicting!
Chocolate Chip Cookies with oil
1 c. oil ( I used canola, and about 3/4 c.)
1 c. brown sugar
1/2 sugar
2 eggs
1 tsp. vanilla
1 tsp.baking soda
1/2 tsp. salt
2 Tbsp. corn starch
2 1/2 c. flour
1 cup mini chocolate chips
Cream the sugars and oil. Add the eggs and vanilla and mix well. In a separate bowl, combine the baking soda,salt,corn starch, and flour. Stir. Add the dry mixture to the wet and stir well. Fold in the mini chocolate chips. Bake at 375 for 8 minutes on parchment lined cookie sheets.
