This recipe is a keeper!
I used canola oil instead of butter and they were delicious. Crisp edges with slightly soft centers. I also liked the texture from the addition of corn starch.
I used mini chocolate chips, so there were some in every bite.....so addicting!
Chocolate Chip Cookies with oil

1 c. brown sugar
1 tsp. vanilla
1 tsp.baking soda
1/2 tsp. salt
2 Tbsp. corn starch
2 1/2 c. flour
1 cup mini chocolate chips
Cream the sugars and oil. Add the eggs and vanilla and mix well. In a separate bowl, combine the baking soda, salt, corn starch, and flour. Stir. Add the dry mixture to the wet and stir well. Fold in the mini chocolate chips. Bake at 375 for 8 minutes on parchment lined cookie sheets.
