Giant Oatmeal Cookie



Here I am again with another giant cookie! This time it's a oatmeal raisin.

 I used to make batches and batches of these when the kids were growing up. We don't need that many cookies on hand anymore...or we will eat them all! So one big cookie is just perfect for us.

Warm from the oven...crispy sides and chewy center...an awesome treat after our fall chores were done for the day!




Giant Oatmeal Cookie


2 Tbsp. butter, softened
2 Tbsp. brown sugar
2 Tbsp. sugar
2 Tbsp. egg
1/8 tsp. vanilla
4 Tbsp, flour
pinch of salt
1/4 tsp. baking soda
6 Tbsp. oats
1/4 c. raisins

Combine the butter and sugars. Stir in the vanilla and egg. Mix in the flour, salt, and baking soda. Mix well. Add the oats and raisins. Form ball and place on a parchment lined baking sheet. Pat down slightly. Bake at 350 for 15 minutes until edges are browned and center is slightly soft.
