Baked Blueberry Pancakes


Ya-UM! I'm lovin' this recipe. It's from Norna Detig out of Simple and Delicious. The serving size is huge! You pour the batter onto a cookie sheet and bake it, cutting them into 6 squares and then in half to form triangles. I sprinkled a few more berries on top, added some butter and syrup.  The blueberries and cinnamon taste awesome together.

 What I really like about this recipe is how easy it is...no pancakes to flip and turn. BONUS.. they freeze well too. Just pop them into the microwave and you've got a fast, tasty, hot breakfast!


Baked Blueberry Pancakes

2 c. pancake mix
1 1/2 c. fat free milk
1 egg
1 Tbsp. canola oil
1 tsp. ground cinnamon
1 c. fresh or frozen blueberries

Combine the pancake mix, milk, egg, oil, and cinnamon until just combined. Fold in blueberries. Spread in a greased 15x10x1 inch greased pan. Bake at 400 for 10-12 minutes. 6 servings at 200 cal. 4 fat 3 fiber.

I've had dutch babies (pancakes started on the stovetop then baked to puff in the oven) but I've never baked pancake batter before. Interesting.
