Parmesan Basil Toasts
I have quite a collection of recipes using basil, as it's one of my favorite herbs. This summer, my basil is growing so well I can make this anytime I want!
This toast is a fun appetizer, great served with soup, or along with a bowl of pasta. Sometimes I just make enough for myself for a quick lunch along with some salad.
Parmesan Basil Toasts
1/4 c. butter, melted
1 clove garlic, minced
1/2 c. Parmesan cheese
3 tsp. fresh basil, chopped
4-6 sliced french bread ( depends on how thick you like the cheese on top)
Mix the melted butter, garlic, cheese, and basil, and set aside. Broil the french bread slices until lightly browned. Spread the cheese mixture on top, return to broil 2 minutes until cheese is melted.

I had to pin this! Nice to look through my list and be reminded of this great, quick lunch! Love fresh basil, and I planted a ton of it this year. :-)
