Corn and Red peppers
This is a new recipe for me....I found it in Light and Tasty magazine.
It's such a pretty and bright dish, with the yellow and red. Very tasty. I really liked the little kick from the chili powder,too.
Corn and Red Peppers
2 c. fresh corn
1 Tbsp. olive oil
2 large sweet red peppers, chopped
1/2 c. onion, chopped
1 garlic clove, minced
1/4 c. fresh minced parsley ( I used just a bit)
1/2 tsp. salt
1/2 tsp. chili powder
1/4 tsp. pepper
In a non stick pan, cook the corn and the olive oil 2 minutes, add the peppers,onion,and garlic. Cook and stir for 4-6 minutes or until peppers are crisp tender. Stir in parsley,salt, chili powder, and pepper. Cook 1-2 minutes longer.
