Pork Stir Fry

Here's a delicious, simple and quick meal.

Stir fry is always a winner....there are never any leftovers!

Pork Stir Fry
T of H

4 oz. pork tenderloin, cut into cubes
1/2 c. sliced fresh mushrooms
1/2 c. fresh sugar snap peas
2 Tbsp. chopped green pepper
2 Tbsp. chopped red pepper
1 Tbsp. chopped green onion
1/4 tsp. minced garlic
1 Tbsp. soy sauce ( I did add more)
1/4 tsp. sugar
1 1/2 c. brown rice, cooked

Stir fry the pork in canola oil until no longer pink. Remove from pan and keep warm. Add the vegetables to the pan and stir fry until crisp tender. Mix the soy sauce with the sugar and add to veggies. Add the meat and rice and heat.
