Skillet Brownie for 2

Sometimes you just need a brownie.

Not a big pan...or you might eat the whole thing. That's when you can make this skillet brownie for 2. Actually you could also bake it in a small loaf pan if you don't have a  6" skillet. The skillet adds a nice texture to the sides though.

I like to add some chocolate chips on top and a sprinkle of powdered sugar, but you could make a bit of icing. Or eat it plain too...either way it's a delicious treat!

Skillet Brownie for 2

5 Tbsp. flour
6  1/2 Tbsp. sugar
2 1/2 Tbsp. cocoa powder
1/8 tsp.salt
1 egg
3 Tsp. oil
handful of chocolate chips

Mix the flour, sugar, cocoa and salt. Add the egg and oil. Mix well and pour into a 6" cast iron skillet. Sprinkle chocolate chips on top. Bake at 350 for 20 to 30 minutes.
