Tater Tot Enchilada Bake

This is one of those simple recipes that is always a hit. My family has always loved tater tot hot dish, and this spicier version is also delicious. I like that it comes together so quickly and is a fun meal with a salad on the side. We love it with a big dollop of sour cream on the top!

Tater Tot Enchilada Bake

1 lb. burger
1 small onion, chopped (optional)
2 tsp. taco seasoning
1 can enchilada sauce 
2 c. tater tots (or more...enough to cover the top)
1 c. cheddar cheese

Brown the burger and onion. Add the seasoning and enchilada sauce and simmer 5 to 10 minutes. Spoon into casserole. Top with tots and cheese. Bake at 350 for 25 minutes or until tots are done. Can serve with sour cream, black olives, salsa, and cilantro.

Wow this looks so yummy Laurie. Will definitely have to try it. This will be a nice switch up from my Mexican Lasagna and salad.
