I love corn on the cob so we have it quite often in the summer. Sometimes I like to serve it with cilantro butter..sometimes with basil butter..but ALWAYS with plenty of butter!
Here's a quick recipe for the cilantro butter:
Cilantro lime butter
1 stick butter, room temperature
1/8 c. chopped fresh cilantro
juice of 1/2 lime
1 tsp. salt
1/2 tsp cayenne pepper
Mix all together and coat ears of corn. Wrap in foil and roast at 400 for 25 minutes.
