Microwave Coffee Cake in a Mug


I've been seeing alot of easy  "mug desserts" on Pinterest lately and figured I should try one out. I chose the coffee cake, which I found on Prudent Baby. She gives step by step directions, but I have also included the recipe on this post.

We liked it!

It was warm and comforting.  Of course the topping was our favorite! I made a few changes to the recipe....I used egg beaters....just a tablespoon....and a bit less cinnamon then called for on the topping.



I found a regular sized mug was perfect for this. I sprayed it with some Pam so it would come out easily.  I wanted to see what the bottom looked like and also because I wanted to cut it in half to share with Brent.

I cooked it on high only 1 minute, and did the toothpick test. The bottom was done perfectly.

It was alot of fun making this and I'm sure I'll make it again. One mug was just right for the two of us!






Microwave Coffee Cup In A Mug

1 T. butter, softened
2 T. sugar
1 T. egg beaters
2 T. sour cream
a drop of vanilla
1/4 c. flour
1/8 tsp. baking powder

Topping
1 T. butter
2 T. flour
1 T. brown sugar
1 tsp. cinnamon

In the mug, cream the butter and sugar, add the rest of the ingredients and stir well. Mix the topping in another bowl and sprinkle on top. Microwave on high for 1 minute or until done.

Going to try this as he likes coffee cake and I dont, so a cup size cake would be perfect. It would be good to cook at my mothers for her as well. Thank you for the idea.

I have never seen a mug cake like this, they are all chocolate, but hubby loves coffee cake so this would be perfect.

What exactly is egg beaters? Is that those pre-shelled eggs in a carton? I'm "cooking down south" and have honestly never used that. Could I just beat an egg and use a Tbsp. of that?

This is a pretty good recipe for being cooked in a microwave! And the best part is how good it was, for how quick it was to throw together.
I did have to cook it longer than a minute (and to my liking), and instead of "egg beaters" I just used a tblsp of egg...still came out great!Next time I think ill make double of the topping too! Its sooo yummy and brings the cake together as a whole!

Thank you so much! We had run out of dessert and my husband was jokingly ask what are you gonna make for me. I remembered this and thought now was a good time to give it a try. Like 4 minutes later it was all done and he loved it. Flavor wise this was just like a full size cake. How fun is that!

Just made this! So yummy! I beat one egg and used a tablespoon of that. This definately satisfied my craving for coffee cake without having a whole cake in the house! Will definitely make this again!

Making these for my little 3 year old and he just loves them. Instead of the eggbeaters i use 1 T of real egg.comes out perfect every time and so easy.thanks for sharing!

I made this but substituted canned pumpkin for the butter in the batter and the topping. I had to cook it longer than one minutes, but it turned out great (and healthier too)!

Decided to try this tonight. It was quite tasty, but my only suggestion would be to mix the ingredients in a small bowl and then put the batter in the mug. It's rather difficult to mix in the cup because it's so thick. Plus it's a lot of ingredients to assemble for one small item. If I have to do that I'd rather make a full sized cake. Think I'll try something a bit simpler next time.

Great recipe! I’ve made a few cake in a mug recipes and his is the best. I added about 1/3 of a very ripe banana and used cake flour. Also I whisked a real egg and used a tablespoon of that. If you like walnuts, add a handful. Very delicious!
