Sweet Potato Bites
This was a fun way to serve sweet potatoes...fun to eat, too!
Usually I just cut them into bite size pieces, but I really like the slices better. The dip was simple, but absolutely perfect with them.
I just recently got the Rachel Ray magazine, and have been enjoying trying out some of her recipes. That's where I found the idea for this.
I bought more sweet potatoes today, so I'll be having this every nite this week!
Sweet Potato Bites
(Rachel Ray magazine)
Sweet potatoes, peeled and sliced thin
Toss with olive oil and kosher salt and pepper. Bake on cookie sheet at 400 for 20 minutes. Serve with sour cream mixed with dill.

We just love sweet potatoes! I'd take them over other potatoes any day.
