Herb Crusted Tomatoes
I was looking through my old Taste of Home magazines for some low cal sides and thought this sounded good.
It was!
I loved the combo of spices and it gave the tomatoes just that little something to make them special. I think next time, I would cut the tomatoes into slices, as a half was quite a bit. Of course I would have liked more cheese,too, but for the calories this amount was just enough!
Herb Crusted Tomato
4 tomatoes, halved
1/4 c. Parmesan cheese
2 Tbs. dried bread crumbs
1 tsp. dried basil
1 tsp. dried oregano
fresh ground pepper
1 Tbsp. Olive Oil
2 Tbs. fresh minced parsley
Mix all the ingredients and spread on top of the tomatoes. Broil 3-5 minutes until topping is browned. 1/2 tomato is 46 cal. 3 fat. 1 fiber.

Oh yes, I like the idea of tomato slices, maybe in a tight circle, with the herb mixture sprinkled on top. This is definitely a recipe I'll use this summer when I have nice juicy tomatoes from the garden! And doesn't that look beautiful.
Yes, this would be good on sliced tomatoes. But even better on top of macaroni and cheese as well! But that would not be so low-cal. No wonder I can't ever seem to lose weight?
