Mandarin Orange Salsa
I've been trying out different salsa's and I have to say this is one of the best I've made so far. I served it for Memorial Day and it was a hit.
We all loved the sweet and salty combo. It's a pretty dish to serve too, as the colors are so bright and festive. It even tasted better the next day, as there was just enough left for me to take to work for lunch.
I will be making this often this summer...it's so light and refreshing!
Mandarin Orange Salsa

5 plum tomatoes,chopped
1 large sweet onion, chopped ( I used 1/2)
2 jalapeno peppers, seeded and chopped ( I used one)
2 Tbsp. sugar
2 Tbsp. cilantro, chopped
2 Tbsp. lime juice
1 tsp. salt
1 tsp. minced garlic
1 can (15 oz.) mandarin oranges, drained.
tortilla chips
Combine the first 8 ingredients and gently stir in the mandarin oranges. Chill until serving, drain if desired.
