Dijon Roasted Potatoes
Brent's a big fan of these. They are really delicious. I roast potatoes ALOT. Usually I just dump some olive oil and some type of seasoning on them and throw them in the oven,though.
This is almost as easy, and the mustard gives them a nice flavor. I'm not sure where I copied down this recipe, but it's a good one!
Dijon Roasted Potatoes
4 potatoes, quartered
1 tsp. olive oil
2 Tbsp. Dijon mustard
3/4 tsp. paprika
1/4 tsp. thyme
1/2 tsp. salt
1/4 tsp. pepper
Mix all the ingredients and toss with potatoes. Put on a greased cookie sheet and roast at 425 for 30-45 minutes. Stir twice. 300 cal. 1.8 fat Serves 4.

These sound really good! Dijon mustard is really good slathered on chicken breasts too!
I can imagine how flavorful these are with the Dijon! I don't make potato a lot....but this would be a recipe I can't wait to try out. :)
