This is another recipe my daughter made for Mother's Day brunch. (I included the link at the bottom.)
We enjoyed this recipe,too. It was perfect with the fruit and dip, and Bacon Quiche cups. All in all, it was one AWESOME brunch!
Ingredients
- 1 large bag frozen country style hashbrowns
- 1 can cream of chicken
- 3 tablespoons sour cream
- 2 eggs or equivalent egg beaters
- 1 onion
- 1 8 ounce bag shredded cheese
- 1 green pepper or small can green chiles,
- 1 small jar pimentos or 1/3 cup chopped red pepper
- 3 tablespoons melted butter
Instructions
- Pre-heat oven to 375 degrees F.
- Mix all ingredients loosely and spread into greased or PAM'd 9x13 baking dish. Cover.
- Bake in oven at 375 degrees F for 30 minutes covered.
- Bake for 10 more minutes, uncovered.
