This is the recipe right off the bag of Toffee Bits. I bought a bag the other day to make some apple dip and had enough left over for a batch of cookies. Brent loves these....I do too, even if they don't have chocolate!
The cookies have a nice soft, chewy center, and a rich buttery taste. A perfect cookie to grab outa the jar when you walk in the door!
1 stick butter,softened
3/4 c. brown sugar
3/4 c. sugar
2 eggs
2 1/4c. flour
1/2 tsp. salt
1 tsp. vanilla
1 tsp. baking soda
1 1/3 c. toffee bits
chopped pecans
Mix butter and sugars. Stir in the eggs and vanilla. Add the dry ingredients. Stir in the toffee bits and pecans. Roll into small balls and place on parchment lined cookie sheets. Flatten slightly. Bake at 350 for 8-10 minutes.I always take them out when the centers are still a bit soft. I also keep a slice of bread in the cookie jar with them, as we like them soft and lightly chewy.
