PW's perfect pancakes

I'm always up for a new pancake recipe...so I pinned this one, tried it, and loved it!

But then again, Pioneer Woman's recipes never disappoint, do they? She uses cake flour, and I have never made any with that before. They were light and fluffy, and well, just as she says...a perfect pancake!
