These are some awesome pancakes!
They are light and fluffy, and the warm blueberries just burst with flavor. Add some butter and syrup and I am in heaven!
I often order pancakes when we go out to eat, as they are such a favorite of mine. I make them at home quite often too. I like to make a batch and freeze them, grabbing a few in the morning to pop in the microwave. It's a great way to start the day!
BUT..there aren't any left to freeze....Brent loved them too!

T of H
1 1/4 c. flour
! Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg, beaten
1 1/4 c. buttermilk
2 Tbsp. canola oil
1 c. blueberries
Mix the dry ingredients together. In a separate bowl mix the wet ingredients, add to dry and stir until blended. Add the blueberries and fry on a griddle. ( I don't add the blueberries to the batter, I put 1/4 c. batter in the frying pan, then drop berries on top. Cook until it bubbles, flip and cook other side until golden brown.)

Blueberry pancakes are the best! Love them and will have to try your way.
Yum! Laurie, those look great! Love your picture. I always freeze pancakes too. So easy to just put on a plate and defrost. ;-D
