Every once in awhile I get a craving for Oatmeal Scotchies...the recipe is right off the bag. I used to make them often when I was a teenager, especially when I had friends coming over. We loved them! But it's been awhile, and I had a craving, so I made a batch.
I can't believe I'm saying this, as I'm such a chocolate lover, but it's kind of a nice change of pace from the usual chocolate chips. Sweet and chewy, with a bit of a crunch around the edges, they are irresistible!
Hershey's
3/4 c. butter, softened
3/4 c. sugar
3/4 c. brown sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 1/4 c. flour
1/2 tsp. cinnamon
1/2 tsp. salt
3 c. quick rolled oats
1 1/2 c. butterscotch chips
Cream the butter and sugars. Add eggs and beat well. stir in vanilla. Add the dry ingredients mixing well. Stir in the butterscotch chips. Bake at 375 for 8 to 10 minutes on parchment lined cookie sheets.
