Today I'm sharing one of our favorite "meals for two" recipes...mini meatloaves.
A pound of burger can go a long way for two people! I like to make spaghetti pie with a half pound, which makes at least 2 meals for us plus leftovers for lunch. Then I take the other half and make mini meatloaves...another 2 meals.

The mini meatloaves are so moist and flavorful, and the topping..well..I think is the best part! Sweet with a bit of a tang...yum!
1/2 lb. lean hamburger
1/2 egg
1/4 c. quick oatmeal
1/2 c. shredded cheddar cheese
1/4 plus 1/8 c. milk
1/2 tsp. salt
1/3 c. ketchup
1/8 c. brown sugar
3/4 tsp. mustard
NOTE: 1 egg equals about 3 Tbsp. Whisk the egg and then measure out 1 and 1/2 Tbsp. for the recipe.
Combine the burger,egg,oats,cheese,salt and milk. Form into 4 small mounds. Place in a greased 9" baking dish. Combine the ketchup,brown sugar and mustard. Spread on top of the mounds and bake at 350 uncovered for 45 minutes to an hour hour, until done.

My husband loves meatloaf........ me not so much, however your recipe looks like it would be fun, and easy to make. It also looks tasty! Will give it a try.
