BBQ meatballs
I think this is one of my all time favorite recipes for meatballs, for several reasons. I'll start with the taste, which after all is most important! The flavor and texture are perfect, and the BBQ sauce is sweet and slightly smokey. They are SO moist....just melt in your mouth good! I have served this many times, and everyone loves them.
The other reason why I like this recipe is the convenience. It just takes minutes to shape them and get them into the freezer.
Another bonus is that this makes a TON of meatballs! I love having them in the freezer, ready for a meal or an appetizer. Whipping up the BBQ sauce is easy, and an hour later they are ready to serve.
This recipe is found in just about every old church cookbook I have, so I guess I'm not the only one who loves them!
BBQ Meatballs
3 lb. burger
1 12 oz. can evaporated milk
1 c. dry oatmeal
1 c. soda cracker crumbs
2 eggs
1/2 c. finely chopped onion
1/2 tsp. garlic powder
2 tsp. salt
1/2 tsp. pepper
2 tsp. chili powder
Combine everything and shape into walnut size balls. Place on wax paper lined cookie sheets and freeze until solid. Store in freezer bags until ready to use.
BBQ Sauce
2 c. ketchup
1 c. brown sugar
1/4 tsp. liquid smoke
1/2 tsp. garlic powder
Combine and stir until sugar is dissolved. Place meatballs in a greased 9 x 13 pan, pour sauce on top and bake at 350 for 1 hour. Makes 80 meatballs.

I must be living a sheltered life as I've never heard of these or any meatball with evaporated milk, cracker crumbs, and oatmeal. Sounds delicious!!!
