Chocolate Chip Oatmeal Cookies


Nothings better than a good cookie!
I've always tried to keep homemade cookies on hand or at least in the freezer, but lately I've been slacking. Since I've been trying to cut back on calories not much baking has been going on!

But Brent likes to take some cookies to work everyday in his lunch, so I figured I should make a batch. One of his favorites is an oatmeal cookie, either with raisins or chocolate chips. For this batch I added the chocolate chips. This is one of those recipes you can really add anything...nuts, coconut, dried cherries, etc. You can't go wrong!



Chocolate Chip Oatmeal Cookies

1/2 c. butter plus 6 Tbsp. butter, softened
3/4 c. brown sugar
1/2 c. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
3 c. oats
1 c. chocolate chips

Mix butter and sugars. Beat in eggs and vanilla. Add flour, baking soda,cinnamon, and salt. Mix well. Stir in oats and chocolate chips. Drop onto greased cookie sheets and bake at 350 for 8 to 10 minutes until golden brown.
