Swedish Almond Strips

New to my cookie tray this year were Swedish Almond Strips. We love anything with almond flavoring, so I had to give this shortbread cookie a try.

They are a crisp butter cookie, full of sliced almonds, drizzled with a sweet icing.

Here are a few other recipes on my cookie tray this year:

And I always make:

Merry Christmas everyone!

Swedish Almond Strips

1/2 c. butter, softened
1 c. sugar
1 egg
1/2 tsp. almond extract
1 3/4 c. flour
1/4 tsp. salt
2 tsp. baking powder
1/4 tsp. salt
1/2 c. sliced almonds
1-2 Tbsp. milk for brushing

1 c. powdered sugar
1/2 tsp. almond extract
milk till right consisitency

Cream the butter and sugar. Add the eggs and vanilla and mix well. Stir in the dry ingredients and form into a ball. Cut in four. Shape each forth into a 12x3 inch rectangle. Place on greased baking sheets. Flatten with fingers slightly. Brush with milk and top with sliced almonds. Bake at 325 for 15-20 minutes until lightly browned at edges. Cool 5 minutes, then cut into diagonal slices. Cool completely before drizzling with frosting.

These look great :) I've always wanted to make those cream wafers as well. Gonna add that to my Pinterest :)
