Feta Cucumber Bites
I could eat a tray of these all by myself. They are so crisp, light, and refreshing!
The Farmers market had some great stuff this week so I really loaded up. I bought alot of cucumbers, mainly for slicing. I'd like to make some refrigerator pickles, too.
But this is one of my favorite ways to eat them!

Feta Cucumber Bites
1/2 c. feta cheese
1/4 c. dill fronds,chopped
2 Tbsp. mayonnaise
1 clove garlic, minced
1-2 cucumbers
Cut the cucumbers in half and scoop out the insides. Mix the feta, mayo, garlic, and dill. Spoon into cucumbers. Cut into wedges.

this is a fun, yummy different way to serve cucumbers and I absolutely LOVE it...thanks for sharing it and it is perfect for a Tea Party! Love it.
These are beautiful! and I agree with Trish, these are perfect for a party. Love Feta and cucumber both. I just made some Feta a couple weeks ago. Thanks for the idea.
