Lite Pound Cake
Hmmmm...seems kind of strange that a "pound" cake could be lite, but they {Taste of Home}did manage to make it some lighter by using less butter and adding some applesauce. I think they did a good job...it was moist and delicious!
I loved the hint of lemon, so refreshing topped with strawberries and whipped cream!
Pound Cake
1/2 c. butter, softened
3/4 c. sugar
3 eggs
1/4 c. unsweetened applesauce
1 1/4 tsp. vanilla extract
1/2 tsp. grated lemon peel
1 1/4 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
Cream butter and sugar until light and fluffy. Add eggs one at a time beating well after each. Stir in the applesauce,vanilla and lemon peel. Combine the dry ingredients and add to the creamed mixture just until blended. Pour into a greased loaf pan and bake at 350 for 45-55 minutes, test with a toothpick. Cool 10 minutes before removing from pan. Serves 12.... one slice is 185 calories, 9 fat, and a trace of fiber.

That does look delicious! You can give me even more than a 'hint' of lemon. I love lemon in the summertime! I wanted to stop in and say hi even though my computer will not be up and running until probably next weekend. It is incredible how inconvenient it can be when they crash! (sent from my husband's computer)
