Blueberry Spread
I love blueberries.
My favorite is blueberry pie. My mom made the BEST.
But, pie has a lot of calories, so this spread is a better alternative. {Especially since I just made and ate chocolate pecan pie last week.}I made this with Fat Free cream cheese so it's even less calories than the original recipe.
It's sweet, creamy, and delicious spread on low fat graham crackers.I think it would be good with other fruits,too.

Blueberry Fruit Spread
(adapted from T of H)
4 oz. cream cheese, softened (can use fat free}
1/2 c. powdered sugar ( can use splenda)
cinnamon,to taste
lemon juice, to taste
1/2 c. blueberries
Mix the cream cheese and sugar,add cinnamon and lemon juice. Stir in blueberries. Serve with graham crackers.

Oooo, that does look good! But then, I like blueberries almost any way they're served up. I see that three of my five bushes are loaded with berries, the other two seem stunted in growth and no berries. :-( And of course I lost the tags that came on them a few years ago, so I have no idea which varieties they are...except that they would have been for the far north.

You should try mixing sour cream,brown sugar (or BS splenda) and blueberries together. It sounds weird using sour cream but it is so rich and tasty! Love the blog!
