Cucumbers with Dill
I've been eating alot of this lately. I like to take it to work with me and eat it with my sandwich. I could eat a bowl full, it's so crispy and sweet.
I love fresh dill. This summer I planted some herbs in a pot on my deck. I've really been enjoying using them. Usually I just have a pot of basil, or maybe some tomatoes, but this year I tried dill, basil, parsley, cilantro, and tomatoes.
I usually kill everything I try to grow, but it's going so well, I may try more next summer!
Cucumbers with Dill
2 medium cucumbers, sliced 1/8 in. thick
1 Tbsp. kosher salt
1/2 c. white vinegar
1/4 c. fresh snipped dill
3 Tbsp. sugar
1/2 tsp. pepper
Place the cucumbers in a colander, sprinkle salt on top. Let sit 15 minutes. Rinse and drain. Mix the vinegar,dill,sugar,and pepper. Add the cucumbers and chill 1 hour before serving.

My mom used to make these all the time! Thanks for reminding me! I love the smell of dill in the garden and it is so pretty for a bouquet of fresh cut flowers!
