I love recipes for just one or two, and this is perfect for a quick dessert. It's meant to be served warm, with a bit of whipped cream on top. I love the fresh taste of the blueberries!
Blueberry Cobbler for Two
1/4 c. flour
1/4 c. sugar
1/2 tsp. baking powder
pinch of salt
1/4 c. milk
1 Tbsp. butter, melted
1 c. blueberries, divided
Mix the flour, sugar, baking powder, and salt. Add the milk and butter, stirring just until moistened. Put 1/2 c. berries into the two greased 10 oz. custard cups. Pour the batter over each, then top with the other half a cup of berries. Bake at 375 for 25 to 30 minutes until golden brown. Serve warm.
